Have a Mexican night with this delicious Moringa Veggie Enchilada and Cabbage salad!

Ingredients Moringa Veggie Enchilada 
  • 8-12 corn small tortillas
  • 2 packets of Kuli Kuli Pure Moringa Powder
  • 2 of 16oz cans black beans (drained and rinsed)
  • 2 of 16 oz cans of diced tomatoes
  • 14 oz of green salsa (like Herdez)
  • 1 can of 15 oz corn (drained and rinsed)
  • 1 Serrano pepper
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp granulated garlic
  • 1 medium sweet onion
  • 1/2 medium red onion
  • 3 medium bell peppers
  • 2 tbs olive oil
  • 4 cups shredded cheese (mexican blend or monterey jack)
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onion

 

Directions

  1. Preheat the over to 375 degrees.
  2. Dice onions and bell peppers.
  3. Dice serrano into very small pieces (if you do not like spicy food, cut in half and discard the seeds first).
  4. Sauté onions with 1 tbsp olive oil in large skillet until soft (approx 5 minutes).
  5. Add bell peppers and serrano pepper and sauté for about 4 minutes until soft. Add corn, beans, tomatoes, and green salsa. Stir in the spices. Bring the mixture to a simmer. Simmer for about 10 minutes. Remove from heat and stir in Pure Moringa vegetable powder.
  6. To assemble, it will be like a lasagna. Use remaining tbsp of olive oil to oil a large casserole dish.
  7. Put first layer of tortillas down. If necessary, rip tortillas in half to create an even base. Layer veggie mixture. Sprinkle with cheese. Add next layer of tortillas, veggie mixture, cheese.
  8. Continue to layer until you are out of veggie mixture or reach the top of the dish (if necessary, can split this into multiple smaller casserole dishes). Finish with cheese.
  9. Bake for 15-20 minutes, until the cheese starts to brown and bubble.
  10. Allow to cool for 5-10 minutes. Finish with chopped cilantro and green onion.
  11. Enjoy with cabbage salad, a dollop of sour cream, and moringa guacamole.

Ingredients Cabbage Salad

  • 1 head red cabbage
  • 1/4 red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onion
  • juice from 1/2 lime (about 1 tsp)
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • salt and pepper

 

Directions

  1. Dice red cabbage, red onion and finely chop cilantro and green onion. Mix all in bowl with vinegar, olive oil , lime juice, and Pure Moringa. Salt and pepper to taste.
