Those little granola bars and other store-bought trail mixes are just so convenient! However, many are hiding preservatives and other even less-than-ideal ingredients, like sugar (or worse, high fructose corn syrup!).
Try these make-at-home raw moringa snack bites that can be infinitely customized and you’ll never need to eat a store bought bar again. They store in the refrigerator for a couple of weeks and can be pulled and wrapped up in wax paper or thrown into a container for when you’re on the go.
DRY INGREDIENTS
(About 2-3 cups)
- 1 cup Raw Pumpkin Seeds
- ½ cup Unsweetened coconut flakes
- ½ cup Dried cranberries
- ¼ cup Oats
- ¼ cup Raw cacao nibs
- Other options include: other seeds, dates, walnuts, almonds
WET INGREDIENTS
(About ½ cup)
- 2 medium bananas (overripe)
- 2 Tbsp Nut butter
- 1 Tbsp Honey
- Other choices: soaked and pureed dates, agave
POWER UPS
(No more than ¼ cup)
- 1 Tbsp Moringa powder
- 1 Tbsp Maca
- Others: cocoa powder, chocolate chips, peanut butter chips,yoghurt chips, chia seeds, flax seeds
OUTSIDE
- ¼ cup Unsweetened coconut flakes
- Crushed nuts (almonds are ideal)
DIRECTIONS
Mix all dry ingredients in a food processor. Pulse until ingredients are still chunky, but easy to blend (3-4 times).
Mash bananas in a large mixing bowl. Add dry ingredients, honey, power ups and anything else to get desired consistency.
Throw mixture in the fridge to cool for 10-15 minutes to make it easier to roll.
Roll mixture into one-inch diameter balls and coat with coconut flakes, crushed nuts, or other dry rolling materials. Makes between 12-15 power bites.
Essentially, all the ingredients can be customized and the ones used in this specific recipe were things that were in lying around the house and needed to be used. You can also use a spatula to flatten them and make squares, which are a bit easier for wrapping up and transporting.
