These gluten-free vegan sliders are loaded with healthy protein from quinoa and a dose of superfoods nutrition from Moringa powder. They work great as a party appetizer or for an afternoon snack. Dip into roasted red pepper hummus to really take them over the top!

Super Green Moringa Quinoa Sliders Recipe

INGREDIENTS

1/2 cup fresh basil, chopped
3/4 cup quinoa
2 tbsp nutritional yeast
1.5 cup frozen broccoli florets
1 1/2 cups water
1/4 cup brown rice flour
1/2 cup frozen peas

1 (.4oz) packet Moringa supergreen Powder

Procedure:
Preheat oven to 350F

To make the Quinoa Slider Mix: Combine the quinoa and 1 1/2 cup water in a pot. Cover and simmer until quinoa istender, about 12 minutes.  While quinoa cooks, chop the basil.
When the quinoa is done (it will look “popped”) , remove lid and let excess moisture cook off
Add the broccoli, basil, brown rice flour, and nutritional yeast and Moringa powder to quinoa. Stir and cook until flour is no longer white, just a minute or so.

To shape and bake the Sliders: Transfer the quinoa mixture, salt, and peas to a food processor or wide blender.  Purée until green and pasty. Taste to adjust seasoning

Scoop about 1/4 cup of mixture for each slider. Regular burgers would be 1/2 cup.  Scoop into a nonstick Silpat or
parchment.

Bake at 350 35-40 minutes, flipping halfway through cooking. Full burgers take about 45-50 minutes

Serve with roasted tomatoes, roasted red pepper hummus, or other favorite toppings.  Enjoy!
