Edamame, Carrot & Moringa Soup
This recipe is vegan as is. Like all recipes featured on our blog, feel free to add your own twists! For this recipe, Chef Benedicto adds that “it is all up to you to decide on the texture. I personally do not like to use the blender, or this soup would have been called silky soup.”

Would like to try this but many ingredients do not have measurements. How many carrots? How much vegetable broth? How much of the spices like dried bay leaves etc.? Never having done this before it helps to have more specific measurements.

Hi Candace, great question! We recommend 1-2 large carrots, diced, 2 bay leaves, and 4-5 cups of vegetable broth. You can always add more broth if the soup is thicker than you like, during the simmering process. Hope this helps! Enjoy the soup and let us know how it turns out too 🙂
