Bananas – those sunny, yellow fruits used in everything from smoothies to baking to just fantastic for an on-the-go snack. We all know bananas are great for getting your daily potassium, but what to do with those bananas that get just a bit too brown for your lunch box?
Here’s something for that next time you end up with a bunch of browning bananas and want something extremely quick and easy to make with them.
INGREDIENTS
- 2 medium over-ripe bananas
- 1 ½ cups unsweetened shredded coconut
- 1 Tbsp Moringa powder
Optional add-ins:
- Cocoa nibs or chocolate chips
- Walnuts or other nuts
- Peanut butter
- Cinnamon or vanilla beans
Try to keep your add-ins to a minimum to allow the banana to act as a binder and keep the cookies together.
INSTRUCTIONS
Put bananas and coconut flakes (or oats if you don’t have coconut flakes handy) into a food processor. Pulse until the mixture is even, but not smooth – texture is good!
Toss add-ins of choices and fold into mixture.
Form balls of cookie batter or use a spoon to drop mixture on a tray and press to flatten for even cooking.
Heat oven to 350° F and bake cookies for 20-25 minutes or until golden. If using oats, change cooking time to 15 minutes or until set.
If you have a food dehydrator, this will also work really well using a 130° F or so overnight (6-8 hours).
Makes about 15 cookies.
