Breakfast is a really difficult meal for me. I seem to find myself racing out the door with a pathetic handful of nuts or a lowly banana half each morning even when I budget in time to feed myself. It’s safe to say my alarm clock and I have a tumultuous relationship. So when I stumbled upon a recipe for yummy oat-based breakfast bars, I was intrigued. They taste amazing, are easy to make ahead of time, and are portable for busy mornings! I couldn’t wait to try them with some moringa.

With oats, chia, moringa, nuts, and coconut oil, you can look forward to being full and satisfied all morning.

Berry Moringa Breakfast Bars

Adapted from Oh She Glows

Prep time: 20min Bake time: 25 min

Ingredients:

2c rolled oats

1 & 1/4 c oat flour (use blender)

2 tsp cinnamon

½ tsp salt

2 T chia seeds

2 T Kuli Kuli moringa powder

1/4 c brown sugar

1T nut butter (I used peanut butter)

1/2c applesauce

2T maple syrup

2 tsp vanilla extract

1 1/2c blueberries (fresh or frozen)

1c raspberries (fresh or frozen)

1/3c chopped almonds

1T melted coconut oil

How to:

  1. Preheat oven to 350°F. Grease an 8”x8” baking pan.
  1. Combine oats, oat flour, cinnamon, chia, salt, sugar, and moringa powder in a large bowl.
  1. In a separate bowl combine nut butter, applesauce, maple syrup, vanilla extract, berries, almonds, and coconut oil. Stir until just combined before adding to dry ingredients.
  1. Use your hands to press the mixture into the greased pan. Bake for 25 minutes, until edges are a slight golden brown. Let cool before cutting into squares to serve.
