I’ve made many a red velvet cake in my day, so it’s shocking that this is my first variation of the deep red treat. It seems like a no-brainer to extend the decadent dessert to St. Patty’s Day! Topped with cream cheese frosting and some orange zest, these moringa-infused cupcakes look like tiny Irish flags – the perfect way to celebrate and indulge responsibly.
Cake Ingredients: makes 12 cupcakes or one layer cake
- 2 cups flour
- 4 Tbsp Moringa powder
- 1/4 cup cocoa powder
- 1/2 tsp salt
- 8 Tbsp unsalted butter
- 1 1/4 cups of sugar
- 2 eggs
- 1 Tbsp green food coloring
- 1 tsp vanilla extract
- 1 cup buttermilk
- 2 tsp distilled white vinegar
- 1 tsp baking soda
Frosting Ingredients:
- 1 (8 oz) package of cream cheese
- 4 Tbsp unsalted butter
- 1 cup powdered sugar
- 1 tsp vanilla extract
- pinch of salt
- Orange zest to garnish
To make the cupcakes:
- Preheat oven to 350F.
- Grease muffin tins or line with baking cups.
- Combine flour, moringa, cocoa and salt into one bowl.
- In another bowl, beat butter until creamy.
- Add sugar and continue to beat until fluffy (~3 minutes)
- Add eggs 1 at a time.
- Add vanilla and food coloring.
- Beat in flour mixture and buttermilk, alternating until all parts are evenly mixed.
- In a small bowl, stir baking soda and vinegar together. Once mixed, add to the batter.
- Distribute evenly into baking cups. Bake until a toothpick inserted in the center comes out clean (~25 minutes)
To make the frosting:
- Combine all ingredients at room temperature and mix well.
- Allow cupcakes to cool fully before frosting them.
- Grate orange zest atop cupcakes to complete your Irish flag!
