I’ve made many a red velvet cake in my day, so it’s shocking that this is my first variation of the deep red treat. It seems like a no-brainer to extend the decadent dessert to St. Patty’s Day! Topped with cream cheese frosting and some orange zest, these moringa-infused cupcakes look like tiny Irish flags – the perfect way to celebrate and indulge responsibly.

Cake Ingredients: makes 12 cupcakes or one layer cake

  • 2 cups flourGreenVelvetCupcakes
  • 4 Tbsp Moringa powder
  • 1/4 cup cocoa powder
  • 1/2 tsp salt
  • 8 Tbsp unsalted butter
  • 1 1/4 cups of sugar
  • 2 eggs
  • 1 Tbsp green food coloring
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 2 tsp distilled white vinegar
  • 1 tsp baking soda

Frosting Ingredients:

  • 1 (8 oz) package of cream cheese
  • 4 Tbsp unsalted butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • pinch of salt
  • Orange zest to garnish

To make the cupcakes:

  1. Preheat oven to 350F.
  2. Grease muffin tins or line with baking cups.
  3. Combine flour, moringa, cocoa and salt into one bowl.
  4. In another bowl, beat butter until creamy.
  5. Add sugar and continue to beat until fluffy (~3 minutes)
  6. Add eggs 1 at a time.
  7. Add vanilla and food coloring.
  8. Beat in flour mixture and buttermilk, alternating until all parts are evenly mixed.
  9. In a small bowl, stir baking soda and vinegar together. Once mixed, add to the batter.
  10. Distribute evenly into baking cups. Bake until a toothpick inserted in the center comes out clean (~25 minutes)

To make the frosting:

  1. Combine all ingredients at room temperature and mix well.
  2. Allow cupcakes to cool fully before frosting them.
  3. Grate orange zest atop cupcakes to complete your Irish flag!
